Better Beginner Pasta (Italian Sausage Pasta)
Much easier than steak pasta. Serves 2–3. Time: prep 10 min, cook 20 min, total ~30 min. 1. Boil pasta according to package. 2. Cook diced onion in olive oil for 3–4 min. 3. Add garlic for 30 seconds. 4. Add sausage and brown it. 5. Pour in sauce. 6. Simmer 10 minutes. 7. Mix with pasta. 8. Add parmesan on top.

Brazilian Beef Stroganoff (Estrogonofe de Carne)
Serves with white rice + potato sticks (batata palha). Time: prep 10–15 min, cook 15–20 min, total ~30 min. 1. Slice beef into thin strips (thin = tender, thick = chewy). Pat dry. Season with salt, pepper, garlic powder. 2. Heat large pan over MEDIUM-HIGH. Add oil/butter. Cook beef in batches 1–2 min per side until browned — don't overcook. Set aside. 3. Lower heat to medium. Cook onion 3–4 min. Add garlic 30 sec. Add mushrooms now if using. 4. Add ketchup, mustard, tomato sauce, and Worcestershire (if using). Simmer 2 min. 5. Turn heat LOW. Stir in heavy cream. Add beef back. Cook gently 2–3 min — do not boil hard after cream is added. Taste and adjust salt. 6. Serve over white rice with potato sticks on top.

Brazilian Ground Beef & Rice
Serves 2–4. Time: prep 10 min, cook 20 min, total ~30 min. RICE: 1. Heat oil in a pot over medium heat. 2. Add garlic and cook 20–30 sec. 3. Add rice and stir for 1 min. 4. Add water and a pinch of salt. Bring to a boil. 5. Lower heat to LOW and cover. Cook 15–18 min until water absorbed. 6. Turn off heat and let sit covered 5 min. GROUND BEEF: 1. Heat oil in a large pan over medium-high heat. 2. Add onion and cook 3–4 min until softened. 3. Add garlic and cook 30 sec. 4. Add ground beef. Break apart and cook until browned (~7–8 min). 5. Add diced potatoes (saucy version). 6. Season with salt, pepper, paprika, garlic powder. 7. For saucy version: add tomato sauce and a little water so potato can cook. 8. Cook another 2–3 min (saucy version: cook until potato soft). 9. Taste and adjust salt. Optional sides: green onions, farofa, simple salad (lettuce, tomato, cucumber, olive oil, lime juice).

Garlic Butter Salmon

Honey Garlic Chicken Thighs
Easiest "looks impressive" meal. ~25 minutes total. 1. Season chicken with salt, pepper, garlic powder. 2. Pan cook 5–6 min per side. 3. Mix 2 tbsp honey + 2 tbsp soy sauce + garlic. 4. Pour into pan. 5. Let sauce thicken 2–3 min. 6. Serve with rice.
